Re: Coconut

macaroons

Re: Coconut

macaroons?

Re: Coconut

yea … macaroons are yummy chewy cookies that dont require flour … really easy to make too. I’ve made them using the following Alton Browns’ recipe … but t here are tons of variations

Ingredients

8 oz Shredded coconut - alton used sweetened … I had the plain so just usd that
1/2 cup sugar
4 egg whites only
pinch salt

On low heat, in dry nonstick pan lightly toast your coconut to just just barely brown.
Seperate your egg whites, add picnh salt and whip it. till starts to look like whipped cream … then start adding sugar. you know … add – whip … add … whip …add … whip till sugar is gone and the mixture is forming peaks. (its not as hard as I made this sound … I swear)
fold in your toasted coconut.
Line or butter or spray your cookie sheet and drop one spoonful of this mixture every 2-3 inches apart. Bake it at 350 till tops are golden brown. mine took 20-25 min to bake … depends on your oven ultimately.

not mine … but helps to see

Re: Coconut

Just eat it, why dont you?

You can make macaroons. You can also buy a box of cake mix and frosting. Bake the cake according to package instructions. And then mix the shredded coconut with the frosting and then apply the coconut frosting to your cake.
