Has anyone tried this? i think it’s an Indonesian dish, although served now all over Singapore and the Malay islands. All it is, is basically rice boiled in coconut milk…the taste is absolutely amazing.
Incase anyone is bold enough to try out the recipe, i found one on this page. erm since i haven’t yet tried making it myself, so i dunno if this recipe actually works or not…sorry :halo: :o
Anyone tried this type of rice? Thoughts, opinions, feedback? (Yes i’m bored!). The rice is extremely delicious… goes well with any vegetable dish on the side.
I love coconut!!
My south indian neighbour gave me this recipe for coconut rice..
It’s different from the one you posted, but nevertheless
Great as a side dish, or even main course, with onion chutney or pickles.
Ingredients :
Rice - 3/4 cup
Grated Coconut - 1/2 cup
Dry Red Chilly - 3
Urad Dal - 2 tsp
Channa Dal - 1 tsp
Cashews - 5
Mustard seeds - 1/4 tsp
Salt - 1 tsp
Asafetida (Hing) - a pinch
Oil - 1 tbsp
Procedure :
Cook the rice and drain. Make sure that the cooked grains are separate. Let it cool on a large plate.
Heat Oil, fry the Urad Dal and Channa Dal until slightly red. Add mustard seeds, chopped cashew nuts, red chilies and a pinch of the asafoetids. Add the grated coconut and fry until VERY SLIGHTLY browned.
Add this mixture to the rice and mix evenly. Garnish with chopped cilantro / coriander.
