coating problem

when ever i make different type of fried chicken mostly my coating left uncook from inside and from outside got good golden colourand chicken cooked nicely as well..whats rong???

Egg, your coating ( bread crumbs etc), and plenty of oil in the pan and the meat should submerge into the oil at a medium temp- allow to brown nicely and gently turn over....

another reason why marrying a desi girl is an advantage "they know how to cook" :)

i dunno i always fried chicken in slow flame..even chicken cooks perfectly bu the coating always came wet from inside.....:( ..which is irrittaing...since coating left uncook i dont really enjoy crispy coating mostly i peeled and threw then eat chicken which dont give me much taste

Some people cook the chicken first. In other words the boil the chick so it's cooked all the way through and then the coat the chicken and fry it. It takes longer for the chicken to cook than for the coating to become golden.

So, try cooking chicken first. Here is a procedure I found off the internet for extra crispy chicken:

1) On a **plate **mix some flour with 2 teaspoon salt and 2 teaspoon pepper and chilli powder (if you wish).

2) **In a bowl**, mix together 2 eggs, 1/2 cup milk, and 1 teaspoon of salt.

*3) * Take the chicken pieces and coat them in the flour mixture in the plate FIRST. Then dip the chicken pieces in the egg mixture in the bowl. Then coat them in the flour mixture AGAIN.

4) Fry for about 15 minutes and keep turning the chicken until golden. The thigh and drumstick pieces could take about 20 minutes to cook.

Yeh try RV's recipe.

Chicken has a high water content too (here it does anyway because they plump the chicken up to make it all juicy). Make sure the coating sticks to the chciken well, so use egg to bind and act like glue.

If the coating still does not work well. Why don't you bake it for 5-10 mins and then fry.

Always dredge the chicken in seasoned flour first then into the egg and lastly the crumbs. Like ddr said.. fry it on medium heat.. u're coating is going brown too quick before the heat reaches the chicken..

Mashallah brains they have, hence why they great at cooking :)
