Any help? I just recently discovered that the stick I have been using as cinnamon was actually accia bark!

cassia, you mean? yes, it is alternatively known as ‘wild’ cinnamon in Indian cooking, and commonly mistaken for cinnamon. the taste and the look of both differs. ‘real’ cinnamon comes in rounder sticks that curl in at the edges, whereas cassia tends to be flatter, wider, and darker in appearance. i’ve only ever used the former, so i can’t tell you whether there’s any significant difference in taste, but from what i’ve read, cassia tastes milder and does not dominate the flavor of a dish as cinnamon does.
as for which one of the two to use, as i said, both cassia and cinnamon are (mostly interchangeably) used in South Asian cooking and both are ‘authentic’, but the true intensity of flavour and aroma in cinnamon cannot be emulated exactly by cassia.
