Chocolate/Oatmeal Cookies

I have tried several times, semi-unsuccessfully to make SOFT chocolate chip cookies or even oatmeal ones. I was able once to make semi-soft oatmeal/raisin cookies using recipe on Quaker Oatmeal box. But i need a TRIED & TESTED recipe for cookies that taste good & don’t turn rock hard after 5 minutes! Help!!!

I have an awesome recipe for chocolate chip cookies that I've made several times and they always turn out awesome!! If I must say so myself:) This recipe requires adding melted choclate into dough and then adding chocolate morsels. You can skip the adding melted chocolate step and only add chocolate morsels at the end. However, I've always made it according to this exact recipe cuz I just love the fudgy chocolate chip cookies, the more choco the better. And yes they are SOFT if you take it out on 8 mins.

Ultimate Chocolate Chocolate Chip Cookies
Ingredients:
• 4 cups (two 12-oz. pkgs.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided
• 2 2/3 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 cup (2 sticks) butter or margarine, softened
• 1 cup packed brown sugar
• 1/2 cup granulated sugar
• 1 teaspoon vanilla extract
• 3 large eggs
Directions:
PREHEAT oven to 375° F.

MELT 2 cups morsels in small, heavy-duty saucepan over low heat; stir until smooth. Remove from heat.

COMBINE flour, baking soda and salt in medium bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl. Add eggs, one at a time, beating well after each addition. Beat in melted chocolate. Gradually beat in flour mixture. Stir in remaining 2 cups morsels. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 8 to 9 minutes or until cookies are puffed. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Sehar, thank you very much. I will be sure to try these out soon. I made cookies 2 nights before following the Quaker Oats box & they were OK. I think I tend to overcook them.
Stupid Question. Even if they dont look brown enough, should I still take them out after 8 minutes?

I think you are overcooking them, don't look for the brown tops, rather stick a toothpick in and check that way. There isn't really much to cook in the cookies except the eggs which i'm sure are done by 8minutes. I take it out at 8/9mins and they are always fine.
