Chocolate Lava Cake

So whenever I go out to eat and they have chocolate/molten lava cakes in the dessert menu i always end up getting them. Last night i made it myself at home for the first time ever. They came out soooooooooo delicious I shocked myself. The recipe is so simple and they are ready to eat within 30 min. Anyone else in love with them?

im always afraid ill mess them up... what is ur recipe?

This makes 4-6 depending on the size of the ramekin you’re using. If you do not know what a ramekin is, please google it.

Prep time: 20 min
Cook time: 10 min

6 oz. bittersweet chocolate, i used this one Ghirardelli :: 70% Cacao Extra Bittersweet Baking Bar

**1.5 bars butter approximately 6oz.

3 eggs

1/2 cup sugar

1/3 cup flour**

  1. Melt all of the chocolate (easiest way to do it is in the microwave).
  2. Add the butter into the chocolate, make sure the butter has been outside so it can easily melt in the chocolate, or you can melt it in the microwave and then add to the chocolate. Leave a small amount of butter to grease the ramekins.
  3. In a separate bowl beat the eggs, mix all the sugar and beat it until its completely mixed.
  4. Add the chocolate mixture to the eggs mixture and beat until everything has combined.
  5. Add all of the flour to the mixture and whip it. You want to make sure that at the end there are no clumps left. The easiest way to do that is to use a spatula and go from the middle out folding the mixture simultaneously. If you can’t do this then figure out someway to make sure there are no clumps in it.
  6. Heat the oven to 350 F.
  7. Grease the ramekins with butter. you do this so when the cakes are done you can easily take them out of the ramekins and place them in plates.
  8. Add the mixtures into the ramekins about 2/3 way because they are going to fluff up in the oven. DO NOT FILL THE RAMEKINS TO THE TOP!
  9. Place the ramekins in the oven for about 10-12 min. When you take them out, put a toothpick in it. If it comes out wet, then they are ready to be served. If it comes out dry you have left them in the oven too long. :slight_smile:

you can eat it straight from the ramekin but u wont see the delicious chocolate oozing out. So waht you can do is take the ramekin out, let it cool about 3-5 min. Then flip it over in a plate and the cake should come out easily since you greased it previously.

To make it look pretty, you can add confectioners sugar on top. You can also add raspberry sauce to it. You can also garnish it with a mint leaf. I wouldn’t care about any of that unless I was gonna serve this to guests. However, do have vanilla ice cream with it, it makes all the difference!

Just a pointer, some people add condensed milk or heavy cream to the chocolate. But after using the chocolate i used, i dont think ill ever be using any other kind. The chocolate really does give a rich, velvety taste and the flavor is just so yummy! I would stick to a baking bar instead of chocolate morsels/chips that are used in cookies.

some people also use semisweet chocolate instead of bittersweet. but i prefer bittersweet, 70%cacao. it was simply delicious! ok i will stop now.

I tried the receipe. I think it had too much butter and too little flour to my liking. Next time i'll put less butter and a lil more flour. Thanks for the receipe, tasted great though :)
