I have a madeup recipe for fried rice (shrimp or chicken) that I just threw together, I dont know if its authentic enough for you. I dont have the exact quanities coz I am used to doing andazay say and just tasting along and adding what is missing, so give it a try if you are not afraid to experiment and change it to suit your tastes. A quick and easy dinner!
I start with the shrimp/chicken. Fry it with some salt/pepper/garlic&giner paste. Add soya sauce, maggi sauce and oyster sauce. Add frozen veggies, I like with the special stir-fry pack coz they have waterchestnuts, but you can use whatever pack you like. Can also add fresh veg, like carrots and bell peppers thinly sliced, and corn. Taste and add more salt/pepper/sauces as needed. Beat an egg in a seperate bowl and then pour it into the pan while stirring really quickly to break up the egg, if you arent fast enough it will clump. Meanwhile cook rice seperately. When rice is done, add in the mixture. Taste and add more sauces and seasoning. You can use the same recipe with noodles

stir fries are the easiest things in the whole world-
my variation on midnighteyes recipe is:
i marinade raw chicken slices in lemon juice, chilli sauce, soya sauce, with finely chopped onion and jalapeno's. just add the chicken to a bowl, throw in all the marinade ingredients, mix it up and leave it in the fridge for an hour.
after an hour, heat up your wok with some oil, throw in the entire bowl of stuff, and stir fry. when they're done, i removed the chicken, add some more oil, and then flash fry the veggies so they're still crispy and not soggy. i also add some soya sauce and chili sauce to the veggies while i stir fry those.
then i combine them both in the serving dish.
on rice or noodles, it tastes amazing.

General Tsao Chicken
Ingredients:
- 1/2 cup cornstarch
- 1/4 cup water
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons minced fresh ginger root
- 3/4 cup white sugar
- 1/4 cup soy sauce
- 1/4 cup white wine vinegar
- 1/2 cup hot chicken broth
- 1 teaspoon monosodium glutamate
- 3 pounds skinless, boneless chicken breast halves, cut into bite size pieces
- 1/2 cup soy sauce
- 1 teaspoon ground white pepper
- 1 egg
- 1 cup cornstarch
- 1 cup vegetable oil
- 2 cups chopped green onions
- 16 chile peppers, sun-dried
- To Make Sauce: In a large bowl combine 1/2 cup cornstarch and 1/4 cup water. Mix together. Add garlic, ginger, sugar, 1/4 cup soy sauce and white wine vinegar. Then add chicken broth and monosodium glutamate and stir all together until sugar dissolves. Refrigerate until needed.
- To Prepare Chicken: In a separate bowl, combine chicken, 1/2 cup soy sauce and white pepper. Stir in egg. Add 1 cup cornstarch and stir until chicken is evenly coated. Add oil to help separate chicken pieces. Divide chicken into small quantities and deep fry at 350 degrees F (175 degrees C) until crispy. Drain on paper towels.
- To Make Mixture: Place a small amount of oil in wok and heat until wok is hot. Add scallions and dried chile peppers and stir-fry briefly. Remove sauce from refrigerator and stir. Add sauce to wok. Then add fried chicken and cook until sauce thickens (add cornstarch or water as needed until sauce is as thick as you like it).

i think max i could handle is up to 50-60ppl - as i tend to make a variety of food instead of bulk quantities of 3/4 dishes...
