What is a good chicken tikka masala recipe? I think British girls are probably more able to answer this because it’s their national dish…just give a tried and acceptable one…
Re: Chicken tikka masala recipe
Here's the recipe I use (not a brit, but a good 'ol USA gal...lol!), I've always gotten rave reviews, my hubby's friend was convinced it was from a restaraunt..lol!
1 t ground zeera (cumin)
1 6 oz can tomato paste
1 tsp ginger garlic paste
1 c Heavy cream
1 t Garam masala
1/4 t Salt
1 Fresh hot green chile chopped fine
1/2 tsp lal mirchi (cayenne pepper)
1 T hara dhanya minced (cilantro)
1 T Fresh lemon juice
1 Stick unsalted butter
Grilled Tandoori-Style boneless chicken cubes
Sprigs of Cilantro, for Garnish
In a clear measuring cup, stir the tomato paste with enough water to make about a cup of liquid, then combine the, ginger/garlic, heavy cream, garam masala, salt, green chile, lal mirchi, cilantro, lemon juice and zeera. Set aside for making the gravy...
Prepare chicken by mixing Shan Tandoori Chicken masala (use as little or as much as you want according to taste) with dahi (yougurt), lemon juice and adrak lasan (ginger garlic paste)....marinate chicken cubes (30 minutes or so) than bake in oven at 425 until chicken is done, and yougurt masala has somewhat evaporated.
To make the sauce/gravy...In your pot, melt the stick of butter then add the ingredients from the measuring cup to the hot butter, bring to a simmer and cook over medium heat for 1 minute, Put the reserved chicken cubes with accumulated juices in the gravy and stir to coat the chicken evenly.
Garnish with chopped hara dhaniya, and serve immediately with fresh, hot naan!!
I have found that when reheating leftovers the next day, the butter always tends to seperate in the gravy, and the color darkens, but it still tastes fabulous!!
Re: Chicken tikka masala recipe
I made this yesterday for Iftar - Yummy! Hubby loved it too!
Ingredients for marination:
1 kg chicken, without skin, cut into 10-12 pcs. Then slit the pieces for perfect marination
3 tbsp full thick yoghurt
3 tbsp fresh cream
1 tbsp fresh ginger garlic paste
2 tbsp Tandoori Masala
1 tsp red chilli powder
1 tsp paprika
1/2 tsp fenugreek leaves
1 tsp garam masala
1 tsp finely crushed cumin
1 tsp finely crushed coriander
salt to taste
1/2 tsp meat tenderiser (skip this if you are marinating overnight)
2 tbsp lemon juice
2 tbsp melted butter or ghee
Mix together all the ingredients including the chicken .Cover and keep it in fridge for 2 hours if you’re using tenderiser, or preferably overnight if without tenderiser.
For the sauce:
4 tbsp butter + 1/4 cup oil (I later drained the excess oil)
1 tsp ginger garlic
300 gm tomatoes, finely chopped
Salt to taste
2 green chilli, sliced
1/2 cup fresh cream
Method:
Pre-heat oven at 200C and bake the chicken. Place the chicken pieces on an oiled oven grill & keep an oven tray underneath to catch any drippings which will be used later in the sauce. Bake the chicken pieces on both sides, for about 8-10 min per side or until slightly charred.
In a large pan, on medium heat, melt the butter then add the oil.
Add the ginger & garlic,1 green chili and fry for a few seconds.
Add in the chopped tomatoes and cook until all the water from the tomatoes dries up.
Add the grilled chicken, the remaining marinade and drippings, salt and green chilli.
Keep on low heat, covered & cook for 10 mins.
Add the cream and cook for another 2-3 min.
Serve hot!
Re: Chicken tikka masala recipe
Can someone give recipe from the scratch rather than the branded recipe masala ones?
Re: Chicken tikka masala recipe
This is the method I use:
Marinate boneless chicken pieces with yogurt, tandoori masala, salt, ginger/garlic pastes, lemon juice, and some oil. Leave overnight or for a few hours at least.
Bake at 400F for 10 minutes, and then grill on high until lightly brown on all sides. Keep aside.
Gravy:
Saute 1 clove minced garlic for a few min. Add 1 finely chopped jalepeno pepper and fry for a few min. Add 1 tsp ginger paste, and 1 finely chopped onion and fry till soft. Add spices: salt, chili pepper, haldi, cumin, corriander powder. Fry for a few minutes. Add a cup of canned tomatoes. Fry until oil separates. Add grilled chicken pieces and some kasoori methi. Saute for a few min. Add a cup of half and half or milk to make gravy. Let it simmer until oil separates. Garnish with cilantro before serving.
(I also add a little bit of honey at the end to adjust the taste of the canned tomatoes if the masala is too tangy. Depends on the kind of tomatoes you use.)
Re: Chicken tikka masala recipe
I tried the same recipe this past weekend, and it turned out superb! We loved it.
Re: Chicken tikka masala recipe
Mama of 3 posted the recipe of her tandoori chicken in recipe portal once. It was very nice. Could someone please find it for me.. I lost it?
Re: Chicken tikka masala recipe
Please pray mine doesn't turn out distasteful!! I think it was a fail because the recipe used canned tomatoes, they have a distinct tast, and with my desi taste oreintated "we are used to fresh tomato" family the taste might be overpowering, so i guess we would have better off with fresh.
