chicken strips in bread crumbs

Hi Guys

Hope you can help.

whenever i tend to make boneless chicken strips in bread crumbs, the crumbs do not stay on the chicken when fried…any advice

i wash the chicken, then dry it, put in flour, then egg and then role in bread crumbs and fry…

also need to know if they can be cooked in oven? or any other advice is welcome

After coating in bread crumbs put in refrigerator for 3-4 hours so the chicken can hold bread crumbs in it.

Do you prefer breadcrumbs or are you willing to try a different coating? I have made fried chicken by dipping marinated chicken in an eggwash+hotsauce mix and then dredging in a flour+bakingpowder+salt mix and the coating doesnt come off at all.

some good news i tried the chicken with bread crumbs yesterday and i think i actually forgot to coat them in flour before and therefore the crumbs didnt stay on.....so basically the following works and you are left with delicious boneless chicken in bread crumbs

  • cut the chicken into small pieces or in strips
  • wash the chicken and dry with papertowel breifly
  • add the chicken to plain flour
  • then coat with egg
  • then coat with natural bread crumbs
  • cook in flat saucepan with a little oil (1/4 inch) on low heat, you may need to add more oil as you go along depending on how much you make
  • once golden brown they are made
  • sprinkle with vinegar for flavour

makes a nice starter!!!

You may be putting too much flour on them......so it's absorbing the egg, and therefore the breadcrumbs can't stick to much.

And yes, you can put them in the oven, saw it on a gora tv show "Rachel's favourite food" and she made them in the oven for her kids

I tried chicken croquettes(sp?) where you coat the left over chicken (cut into small piecse or strips) in thick white sauce (ie not runny) add spring onions and salt pepper herbs. Shape into croquettes ie ovalish shape and dip in egg and breadcrumbs and fry. It was delicious.

I always coat the chicken twice with egg and bread crumbs.

Hmmm..I actually only know one white sauce....the one used in pastas

Heat butter and add white flour (about equal qty) gently mix for 2 mins. Remove pan from fire and add in milk while stirring. Place pan back on fire and continue stirring till desired thickness. Add salt pepper herbs.

May add cheese at the end to make cheese sauce.
