i need a simple and easy recipe for chicken soup…im not feeling well and craving for soup ![]()
Re: Chicken Soup
Poor you. If you cannot get hold of those packet mixes (e.g. knorr or maggi) then the quickest way is to boil a chicken stock cube with water and add stuff like finely chopped chicken, opnions, chillis etc.
If u cannot get hold of chicken stock cube, then boil up pieces of chicken in water, add some spices like garam masala, red chilli etc, and add any veggies u like.
heres my easy recipe
Boil whole chicken in water and add 1 tspn chinese salt (add enough water that its about one cm over the chicken in the pot)
Let it boil...once you can see chicken is cooked, take off heat. Drain Chicken, but keep the water it boiled in
Break the chicken pieces into small pieces, throw away the bones..Add chicken back into the same water it was boiled in
Cook on heat again
Use a small cereal bowl-add cold water to it-fill to the top...add 4 tbspn cornflour into the bowl-one by one and whisk...
with the heat on....add the mixture to the pot-add slowly and keep mixing....this should make your soup thick...
At the end, -if you would like to: break 1 or 2 eggs and whisk in a small bowl...add to the chicken soup...while adding-start closing the heat from the pot...
mix soup-should be perfect
for serving-add soya sauce/salt/pepper/chilli sauce etc
It really doesn't take long to make...
Re: Chicken Soup
ooooo ^ that sounds like my mum's recipe :)
Re: Chicken Soup
This is how I make it:
Boil chicken. Give it a good josh then drain it. Toss the water.
Boil chicken again (in fresh water) with vegetables this time. I use potatoes, carrots, celery, green peppers, onion, corn (optional). Add some MSG-Free Vegeta (2 or 3 teaspoons depending on your taste buds).
After maybe 30 minutes or when you see the potatoes/vegetables have become soft, remove chicken and vegetables from water stock (keep the water - do not throw it out). Shred the chicken and chop up veggies. Throw out green pepper, celery and onion. Place veggies and chicken back into water.
Add about a fistful of noodles. Let it boil a little more. Taste. Add more vegeta/salt/pepper if necessary.
Voila!
