chicken shami kabab recipe

Please share yours. i tried making it but it didn’t come out that good. i think my ratio of chicken to daal was off.

Recipe please. I don’t think I’ve ever seen chicken shami kababs.

i use the same recipe as for beef, but just chicken keema instead. i boiled channa dal separate.
then cooked keema with the coriander powder, garam masala, ginger, garlic, salt, red chilli. then added the daal in it and cooked for few mins. then put it all in the food processor along with fresh coriander, green mirch, chopped up onion.
mine was okay but i think i added way too much daal. next time i will stick the to ratio as the above poster has recommended.

Maybe try making it with boneless chicken thighs instead of keema? Boil the meat and daal spices together and then when it’s gullafied, grind it in the food processer, then and add the harra dhaniya, harri mirch etc.

I’ve usually seen beef shami kababs made with boneless beef cubes/stew meat, not keema so I assume the chicken version would be the same way, no?

i used qeema because i thought it would be easier to mix it all together with the daal. but i think next time ill use boneless pieces and see how it turns out.

Yes you have to use boneless small pieces and not the qeema. And chop the daal and chicken mix on a chopping board with a belan. And water ratio should one and half times of the daal which is fully soaked for an hour - medium flames,

Try it with boneless thigh meat, rather than breast. Thigh meat/dark meat will be more flavorful and moist. Breast mean tends to dry out.

here`s my recepie, it turns out great
i whole chicken , cut it in 12 pieces , 2 large onions, one glass of daal
rest masalas add according to taste
pressure cook till daal is done. cook till extra water has dried. then remove bones from chicken.
put in food processor alond with hari mirch and dhaniya
make kababs.

We never cook the qeema or meat in coriander. I always use meat cubes, qeema is sacrilege, boil meat with garlic cloves, sabut laal mirch, ginger pieces, and coarse onion. and 1/4 daal. reduce until water disappears, blend with a hand blender or masher, please don’t over blend as it turns into pate, Shami kebab should be a bit sinewy. After blending mix garam masala and hara masala and a raw egg, if it feels dry to touch add a couple of spoons of yogurt, patties should be large and thin.

Just cooked no Qeema at all, very meaty lots of raisha (Sinew) DW loved it
