Chicken Seekh Kebabs Too Dry

Salam all,

I’ve been making chicken seekh kebabs at home using all boneless chicken breasts but they are too dry. Here are the things I add

Boneless chicken breast
green onion
1 egg
salt
green chilli
cilantro
and spices

I lightly fry them on the stove and when they have a slightly brown color I pop them into the oven in a covered tray.

Can anyone tell me what I might be adding or not adding for them to be so dry… The ones we get at the restaurant are soooo soft and juicy.

I avoid using chicken breasts, and opt for bonless chicken legs ad I find the meat my nature is too dry.

Maybe you need to brish them with oil, or I read somewhere you could bruch them with yogurt before putting them in the oven maybe try that?

the one at the resturaunt. we get are full of fat or CHARBI.that makes the kebabs binded together and soft.
try adding a pinch of soda or 2 to the chicken. they will bind together and will be soft
i think the oven makes them dry.fry them fully on the pan.

You could try adding more onion to the kebab mixture, as this makes it softer, and also if you add some fresh breadcrumbs.

Add butter to the mix.

actually add 1-2 tbsp (depending on the meat quantity) of yogurt to the mix, works pretty well in kababs and chicken koftas. i think the dairy fat in the yogurt makes up for lack of fat in the chicken.

You must cover them with foil while baking otherwise they will turn out too dry. Also, you can just fry them instead of baking them.
