Re: Chicken Salad Sandwiches
I only use wholemeal or granary bread. White bread is tastier but is v.unhealthy! My tried and tested chicken filling:
Cut chicken (boneless) into smallish pieces and put them in a pan, cover with water and add peeled and chopped garlic and ginger (don't have to be too small just roughly chop them). Put on the cooker and allow to cook till chicken is done all the way through. Once you are sure the chicken is cooked properly sieve the chicken and seperate so that you have just the chicken. Discard the garlic and ginger.
Then shred the chicken and add mayonnaise, season to taste with salt and pepper. Add red onion finely chopped (can add regular onion but I prefer red). Also add finely chopped cucumber. Mix well. Spread on sandwiches and serve! Enjoy.
p.s. I am sure you can try other variations of vegetables...but the above is my standard recipe and is super yummy!
