I only use wholemeal or granary bread. White bread is tastier but is v.unhealthy! My tried and tested chicken filling:
Cut chicken (boneless) into smallish pieces and put them in a pan, cover with water and add peeled and chopped garlic and ginger (don't have to be too small just roughly chop them). Put on the cooker and allow to cook till chicken is done all the way through. Once you are sure the chicken is cooked properly sieve the chicken and seperate so that you have just the chicken. Discard the garlic and ginger.
Then shred the chicken and add mayonnaise, season to taste with salt and pepper. Add red onion finely chopped (can add regular onion but I prefer red). Also add finely chopped cucumber. Mix well. Spread on sandwiches and serve! Enjoy.
p.s. I am sure you can try other variations of vegetables...but the above is my standard recipe and is super yummy!
For the first filling i cover the chicken in piri piri sauce and grill it,then shred it up and mix with mayo and pinch of salt and pepper, put in the sandwich with some lettuce anc cucumber.
so so far its bread-chicken filling-bread so on the second bread spread egg fillings which is just hard boiled eggs mixed in with mayo and sald and pepper and them put sliced tomaro on top.

the third filling i like doing something chatpatta so i usually make an aloo chaat filling wich is just boiled aloo mashed up with sald pepper chaat masala, chilli sauce and lemon juice.
so then you have bread-chicken-bread-egg-bread-aloo-bread.
Then cut into 4 small tirangles so into half then half again, then use a toothpick or skewer to hold them together and serve in platter surrounded with fried or salad!
smething else which is yummy is chicken pizza muffins.
By muffins in mean buns or whatever people like to call them.
Anyways so cut in half and toast the muffins in a grill very quickly then spread very thin slice of tomato puree and then putt on chicken it can be anyyyyyyyyyy kind of chicken bland or spicy and sprinke whatever you want else i usually do sweetcorn, hari mirch and onions then a slight cheese sprinkle and grill again quickly its greatttt for parties!
You can substitute finely chopped lettuce for the above recipe. I like to add a few splashes of hot sauce…and sometimes a bit of vinegar to the filling along with mayo. Gives it a slight tartness and that extra kick.
My favorite thing to put in chicken salad is sweet peppers.. red/yellow/orange, green onions and very finely chopped carrots. And in egg salad, I put some green olives too. Just very few, gives it a nice tang.
Mr Halwa boils chicken and makes a paste of it in the food processor with mayonnaise. He adds black pepper, green or red chillies and fresh coriander to it and then spreads it on bread. On the next layer for your club sandwich you can put any of the normal salad ingredients like lettuce/tomato/onion/cucumber/sweet peppers etc with a mayo mixed with chilli sauce spread.
These recipes are rather good ladies...what else do you all use as sandwich fillers? I guess Im trying to learn how to add variety to my sandwiches so I can serve them at lunches...its too much work to make dahi barey/chole/samosas/etc every single time!!!
