So ive been taking these to work for lunch these days. Its just easier because i make the spread on a weekend for about 20 or so sandwiches which gets used up over the course of a week. I’m not entirely happy with the taste though and wondering what can be done to improve it. Here’s what ive been doing so far.
2-3 lbs of boneless chicken leg pieces cleaned, boiled, cleaned and then shredded by hand.
Two green and two red bell peppers, diced.
One celery stalk diced.
Salt and pepper to taste
1 cup mayo
Throw em all in a bowl and mix em up for a good 1-2 minutes.
And thats pretty much my chicken salad spread. When i’m making the sandwiches in the morning i throw in some lettuce tomato and onion.
I was thinking of maybe doing something else to the chicken instead of just boiling it. Like grill or bake or something. I saw some people frying the chicken somewhere but i dont really want to do that. And i wouldnt know how to grill chicken without making a big mess :-p
Sooooo how would you guys do this differently while keeping it fairly simple.
my husband has been doing pretty much the same lately.. the only difference is he toasts it in the sandwich maker to take it to work!
I used to make sandwiches for my nephews by just using halal chicken spread(easily available in Pakistan) and adding a few slices of tomatoes, and lettuce to it before toasting it... it was their favorite. quick n easy!!

Lusi - yeah 1 cup mayo is a bit too much, basically i just add mayo andaazay se depending on the stuff thats in the bowl already. but yeah too much mayo makes it way too moist
GtG - i tried the sandwich maker but for some reason it just wasnt the same thing.. i think maybe thats cuz i'd put too much mayo and then heating up mayo tastes a bit wierd. i'll try it with less mayo. As for halal chicken spread i think its available here too if i look for it. But i've seen theyre very kanjoos on how much chicken they put in :-p
grilling the chicken would definitely make it taste different tho a good kind of different.......i know when i make it i usually add hot sauce to it so it's not so bland but that's really up to you depends if you like spicy food or not
Try adding some parsley and green onions to it... it'll give it a nicer flavor. Have you tried the asian chicken salad? Its very good and much more filling than this one!
Add chopped onion, maybe shredded carrots to it? Also I like a little salt/black pepper, red pepper, maybe garlic powder to flavor it up. Ever tried adding ketchup to a little bit of it?
