Chicken & Rice Recipe From "MAN"

Hi/Salam Ladies:
Thought would share this recipe of mine , suited to my own taste. I make it when I am really in a mood of having something really good. I used to be chef in Emerils and I emailed this recipe to a friend of mine , just copying and pasting it here as well, so ignore the “Aap” and if u see any names just cover yoru eyes…:P. Even now this recipe attracts huge amount of people in emerils restaurant. I usually use this recipe in Ramadan , though it takes time but take my word for it , it might make ur day :stuck_out_tongue:

Ingredients:

rice 3 cups

Chicken (Whole Chicken yaani kati hoi na ho skin bhi na utari hoi ho) saath main chicken ki 1 boti alehda

lemon jucie tea spons

Tomatoe paste (1 can)

Salt, Black Pepper, Sirka, Tandoor masala ya koi bhi masaala.

Oil

Butter thora sa

Tomatoes 2, sliced gol gol :wink:

Piyaaz sliced gol gol :wink:

Way to make it :

Is recipe kai 3 hissay hain .

1- Yakhni :-

jee greek rice ka taste ka sab sai bara trick ye hai kai wo rice pakatay hoay paani naheen daaltay wink wink. Jee haan paaani bilkul nahen daaltay .. ab bhala bataein chawal kesay bantay hain ? ahhhaaaaaaaa yehi to jaan hai is recipe ki . Paani naheen yakhni dalti hai:) . so 3 cup rice kai liyay 6 cup paani honay chahiyain.
Aap aik haandi main 1 boti murghi ki daalain , us main 8 cup paani daal dain halka sa namak thori si black pepper aur us ko ubalnay dain , yakhni banti rahay gi. Yakhni kai end main us main 6 cup paani honay chahiyay , paani kam ho jaein to aur daal dain.

2- Chicken:

ahhhhhhhhhhhhhh mmmmmmmmmmmmmm ab ye pata chalay jinaab kai chicken kesay banani hai . ye mera apna tareeka hai is liyay bata hi deta hoon kiya yaad karain gi aap mohtarma. aik cup lain us main 3 big teaspoons daalain tail us main daalina thora sa sirka , thora sa namak, tandoori masala or any masala or spices suited to your own taste (You can even use lemon juice and bit of hotsauce ) un ko karain mix.

ab KUKRI ko masala lagana hai hmmmmmmmmm kis tarah lagaya jaey?;). well well dheeraj dheeraj abhi batata hoon..:slight_smile: murghi ko pakrain trick ye hai kai murghi ki skin aur meat kai andar masala lagana hai so apni 2 unglyon sai aik taraf sai skin kai neechay haatha daal kar mughi ki skin meat sai utha dain lekin skin tootni bhi naheen chahiyay;). so ab jab skin har taraf sai attched na rahay to apni ungliyon par masala lagain aur skin kai ander haath daal kar masalam laga dain masala skin aur meat kai darmiyan sari murghi par laga dain na skin kai uper na meat kai ander only between skin and meat::slight_smile:

jab masala lag jaey to usai rakhain oven main us kai neechay aik donga rakh dain takai us ka ras nikal kar is main jata rahay .250 temp main 1-1.5 hour main banay gi check kartay rahain skin jalni nahen chahiyay bas:)har 10-20 mins baad aaram sai palat dain kai skin bhi na tootay aur meat bhi.

3- Rice:-(us time shuroo kijiyay ga jab kukri bannay main 10 mins reh gaey hon)

ab aik haandi main Butter daalain thora zayada daaliyay ga us main Tomatoe paste daalain , us main lemon juice mix kar dain , 3 chamach chotay namak kai aur black pepper ye pure greek recipe hai ofcourse is main humaray desi masalay naheen daltay:). aur phir 5 min pakanay kai baad is main 6 CUP yakhni daalain jo kai already garam ho gi phri is main chawal daal dain .aur paknay dain ehtiyaat kijiyay ga kai taiz aanch main 10 mins main hi ban jatay hain . aur neechay lagtay hain kion kai tomatoe dalta hai is liyay hilati rahiyay ga aur agar zaroorat parai to aur tail daal dena. phir is ko jab paani almost khushki ho jaey to dam sirf aur sirf OVEN Main dena hai kion kai oven ka dam jesa koi dam naheen:)

Well well I will just show you how to serve it. Aik gehra bartan lain jis main mehmanon ko biryani bhi detay hain aur us ka cover sheeshay ka hota hai us kai middle main roast chicken rakhain , kukri kai ird gird pehlay tomatoes gol gol kaat dain us kai uper Piyaz ird gird phir jo donga rakha tha ove main jis main kukri ka ras girta raha wohi ras is murghi aur tomatoes aur piyaaz par daal dain aur is ko cover kar dain.

Saath main aleha rice serve karain aur dil karai aur yakhni bachi ho to usai bhi serve kar dain main saath main tomatoes ki chatni bhi bana leta hoon , as I said suit to yourself . and I dont use OIL i only cook with Butter. cuz nothign tastes better than that lady:)
