Chicken Question.

Whenever my wife makes some kind of chicken salan or chicken biryani. Next day the leg pieces and wing give certain kind of smell/boo/bisand and we end up throwing leg and wing pieces , the breast pieces do not have any kind of smell/boo/bisand.
This happens with tandori and bar b q chicken too. If it is all fresh no problem problem happens with the left over pieces that too only with leg and wing pieces.
Shesh kabab made with chicken breast has no issues.

It is not true for certain kind of dishes like , achar gosht or qorma.

Anybody shares the same experience ? If yes is there any remedy for it ?

Sorri, never experienced this - but i tend to use lemon juice or/and plenty of garlic in chicken dishes as it kills any smell and tastes better..

Before you cook the chicken, marinate it with some lemon juice and garlic for a while. When "bhuno-ing" the chicken add zeera.

We never experienced it in Pakistan, LA, Chicago . But in this South Eastern City of USA we are experiencing this.

Maybe the chicken is of a different breed and raised differently. For instance, chickens and goats in warmer zones don't smell as much as the ones raised in colder areas. The latter have more fat which smells during cooking.

Once in a while I too do get that kind of smell from chicken and it is basically the leg part and i literally have to put lot stuff to try to get rid of that smell...Oh and I never had this smell issue in Fl but have had it in MN, so maybe it has to do with where they are raised and their breed...
