PULAO BY SAMINA JALEEL (this is my tried & tested recipe)
ING:
Mutton / 1/2 kg.(putt/raan/seenay ka gosht is best )
Sabut dhania / 1-1/2 tbsp.
Saunf / 1-1/2 tbsp.
Zeera / 1 tsp.
Tez patta / 1 leaf.
Sabut lal mirch / 6-7 nos.
Onion / 1 sabut.
Garlic / 1 whole bulb.
Darchinni / 1 piece.
Ginger / 1 piece.
Chotti illaechi / 7-8 nos.
METHOD:
-Malmal ke kapre main dhania saunf aur zeera dal ker potli bana lein.
-Pan main gosht,potli,tez patta,sabut lal mirch,onion,garlic,darchinni,ginger,
chotti illaechi aur 1 jug pani dal ker gosht gaala lein.
-Halki si kasar rahe gosht main,strain kar lein yakhni,aur gosht alag plate main
rakhein.
OTHER ING:
Oil / 1 cup.
Onion / 2 medium,sliced.
Tez patta / 1 leaf.
Darchinni / 2 pieces.
Chotti illaechi /6-7 nos.
Long / 5-6 nos.
Kali mirch / 8-10 dane.
Ginger /garlic paste / 1-1/2 tbsp.
Dahi / 1/2 cup.
Ginger / 1 piece,bareek juillene.
Rice / 1/2 kg,soaked for 20 mins.
Jaifel / javetri powder / 1/2 tsp each.
Kewra drops / 2-3 drops.
METHOD:
-Pan main oil garam kar ke onion dalein saath hi sabut garam masala dalein .
-Onion golden ho jae tu ginger/garlic paste dalein aur bhooney.
-Dahi thora thora add kar ke bhoonte jaein,gosht add karein aur bhooney.
-Ginger juilliene add karein,yakhni add karein aur mix kar lein.
-Boil hone laage tu rice add kar dein aur mix karein.(yakhni itnee ho ke rice doob
jaein).
-Jaifel/javetri add karein,aur kewra essence dalein aur pakne dein.
*Chicken Yakhni Pulao BY CHEF ZAKIR

INGREDIENTS:
Chicken - ½ kg (cut into pieces)
Rice - 2 cups ½ kg] (soaked in water for 1/2 hour)
Sabit Dhania (coriander) - 5 tsp (or 1 tbsp)
Saunf (Fennel Seeds) - 5 tsp (or 1 tbsp)
Ghee/Oil - ½ cup
Ginger garlic paste - 2 tbsp
Onion - 1 med size (thinly sliced)
Whole garam masala:
Badi elaichi - 2 to 3
Jaiphul - few daane
Javitri - few daane
Laung - 6 to 7
Kali mirch daana - 6 to 7
Dalchini - 3 to 4 small sticks
Tomato - 1 (chopped into slices)
Raw Green Chilies - 3 to 4 (chopped)
Crushed red chilies - 1 tsp
METHOD:
1. Make masala potli: Take muslin (malmal cloth), put 5 tsp sabit dhania and 5 tsp saunf and make a tight knot potli and cut the extra part of the potli malmal cloth and keep aside.
2. Heat ½ cup ghee in a deep sauce pan, add the masala potli, then add 2 tbsp ginger garlic paste mix it well and sauté it till golden brown, then add sliced onion mix it again, then add the (whole garam masala - 3 badi elaichi, few daane of jaiphul & javitri, 7 laung, 7 kali mirch daana, 4 sticks of dalchini) mix it well and stir fry it until the onion turn transparent.
3. Then add the chicken pieces and mix it and cook till chicken turn little whitish, then add sliced tomato, chopped raw green chilies mix it well.
4. Then give flavor for that add 1 tsp crushed red chili, salt mix it well and stir fry it.
5. Then add 1½ glass of water mix it, then add 2 cups soaked rice, keep on stirring in the rice so that the spices get mixed well with the rice, and cook it till the water is absorbed no water remains just the bubbles from it comes out, and also see that no kani in the rice is devolved, the rice should still remain Kaccha (raw), then close it with lid, put the gas flame to slow and give dum (steam) give dum for about 10 to 12 mins or more until the steam comes out of it.
6. Open the lid mix it a little and dish out in a serving place, Chicken Yakhni Pulao is ready to be served.
