Re: chicken karahi without packet masla
I believe this was Chef Zakir’s recipe once posted here on GS.
Heat some oil in a pan.Add ginger and garlic to it and fry it for a bit. When fragrant, add the washed and drained chicken pieces alongwith the regular spices (salt/red chillies/zeera/haldi/cinnamon stick).Flip the pieces and cook for a few mins…when it changes color (like in ten minutes),add chopped tomatoes (I usually use 4-5 for 1 whole chicken)…flip everything again and cook for a few more mins.then cover and let cook for a while till you think it will be done.Garnish with julienne ginger, chopped green chillies and cilantro.Serve.
(I usually add the green chillies during the last ten or so mins of cooking as it infuses the flavor better rather than just using them in garnishing. Also sometimes I reduce the amount of red chillies and use some black pepper instead.Gives it a different flavor).

That looks good. I have a simple recipe of using only salt, crushed red chilli flakes and red chili powder both and no other spices, and lots of tomatoes and yoghurt topped with hara dhanya, sliced gingers and a couple of whole green chillies. Finger lickin yumm

Re: chicken karahi without packet masla
Let’s see, fry some ginger garlic paste, add chicken fry a bit, add lots of tomatoes and cover to let soften. Add salt, crushed chilli flakes and red chilli powder to taste, cook a bit, whip a bowl of yoghurt add, simmer on high heat, cover and let cook on low heat. At the end add a few green chillies, chopped corriander and julienned ginger, swirl around a bit and cover. Boneless chicken can be used too.

Looks like the dhaba karahi! Yummy!
Re: chicken karahi without packet masla
i make chicken karahi with almost this recipe but dont add yogurt, my mother told me if you’re adding tomatoes, then you don’t add yogurt. in the masalas I add, chilli powder, cumin powder , coriander powder and turmeric.
Re: chicken karahi without packet masla
Can you make the karhai in a regular pot? I dont’ have a good karhai.
Re: chicken karahi without packet masla
^ yeah. i generally use a wok to make it though. but i dont see why you cant make it in a regular stock pot or sauce pan as long as its big enough.
Re: chicken karahi without packet masla
I made it in karahi/wok kind of pot. It was a spacious pot. However, my mom makes it in a stock pot/curry pot.
Re: chicken karahi without packet masla
I make sure whtever I cook , the pot should be spacious.
I fry some ginger garlic…add chicken and cook until it turns color and begins browning a bit. Add in chopped tomatoes and red chilli, salt, coriander powder and a small pinch of turmeric. Let it cook away until the chicken is mostly cooked thru…add a bit of water as you cook so it doesn’t dry out. I also add red pepper flakes and a tiny bit of freshly ground black pepper…gives a good flavor. Then i slice up one onion, pretty thick. One tomato…sliced thick again…and lots of fresh coriander and 2-3 green chillies and a bit of ginger. I add the tomatoes and onions…mix thru for a minute…the onions shouldn’t be super soft, just kinda wilted…and then add the rest of the coriander, green chillies and ginger..done.
I don’t add yogurt bcos that makes more of a curry-based salan…the times i’ve had karahi chicken in Lahore and Islamabad it was dryer with a tomato based salan/gravy. And yes…def cook it in a wide/open pot.
Re: chicken karahi without packet masla
I made this last night as well…to be eaten during the week, tasted it to make sure it was good and it was SOOO yummy. Much better thn the shan packet masala.
Thank you ladies for sharing !
Re: chicken karahi without packet masla
This is how my mum makes it.
In oil, add grounded black pepper. As soon as it sizzles, add meat. Bhoon meat with a adruk/ lessun paste. Add thinly sliced tomatoes along with salt, Lal mirch and haldi. Cover to soften the tomatoes. Open lid and add kutti hui sabut dhunya and zeera (2:1 ratio). Bhoon again. Add harra dhunya, harri mirch and thinly sliced adruk with the tiniest amount of water to just losen the gravy. Turn off heat. Add 1 dongey ka chumcha worth of vinegar. Turns out good every time mA.
