Ingredients
2 tablespoons vegetable oil
1 onion, grated
2 cloves garlic, chopped
1 1/2 pounds boneless skinless chicken thighs, cut in half
3 teaspoons ground turmeric
1 teaspoon chili powder
1 1/2 teaspoons salt
1 (14.5 ounce) can peeled and diced tomatoes
2 tablespoons ghee (clarified butter)
3 teaspoons ground cumin
3 teaspoons ground coriander
2 tablespoons grated fresh ginger root
1/2 cup chopped cilantro leaves
Directions
1 Heat the oil in a large deep skillet over medium-high heat. Add onions and garlic, and cook for about 2 minutes. Add the chicken, and season with turmeric, chili powder and salt. Fry gently, scraping the bottom of the pan frequently and turning the chicken. Pour in the tomatoes with their juice, cover the pan, and simmer over medium heat for 20 minutes. Uncover, and simmer for another 10 minutes to let the excess liquid evaporate.
2 Add the ghee, cumin, ground coriander, ginger and cilantro, and simmer for another 5 to 7 minutes. Serve the chicken pieces with sauce spooned over the top.

Chicken Jalfrazi
Ingredients:
1 Kilo Boneless chicken meat
4 medium sized onions chopped
4 tomatoes chopped
2 onions cut into thick slices
2 tomatoes cut into broad slices
1 capsicum cut into slices (the yellow variety can also be used to enhance the color of the dish)
1 tsp. garlic paste
1 tsp. ginger paste
¼ tsp. ground garam masala
¼ tsp. haldi powder
½ tsp. dhuniya powder
Salt according to taste
3-4 tbs. oil
Method:
1- Sauté the chopped onions in the oil till transparent. Add the garlic, ginger, haldi, dhuniya and chopped tomatoes.
2- Cover and simmer to allow the tomatoes to soften. Add the chicken and cook for another 10 minutes or until the chicken is slightly tender.
3- Add the salt.
4- Take a few teaspoons of oil from this chicken into a separate frying pan.
5- Heat and add the sliced onion, capsicum, sliced tomatos, and garam masala.
6- Sauté this for a while till the vegetables soften lightly. To this frying pan add the cooked chicken. Mix and allow cooking for another 2-3 minutes, serve with rice.
