I have a full chicken cut up. I made salan just a couple days ago, I make karahi and pulao pretty often, I don’t have palak otherwise I would have made palak chicken…please suggest some nice spicey masaleydar recipe..

^I saw this chicken tandoori recipe on tv today, looked super simple.
Just marinate a whole chicken in 1 cup of vinegar and 5-6 Tbsps of BBQ masala (I guess the chef was refering to ready made masala)
Steam the chicken until almost done.
Brush it with butter and bake in oven for 5-10 mins for a nice color and finish.
I am not a fan of ready made masalas, so if I make it I'd prolly substitue it with salt+pepper+crushed chillies+crushed dry corriander and cumin+chat masala all according to your taste and maybe a pinch of red food color.

1 teaspoon each of freshly ground coriander (dhania seeds), zeera, paprika, chilli powder, garam masala, black pepper. Tiny bit of methi SEED powder if u have it. Fresh ginger n garlic paste. Dash of worcestershire sauce if u have it. Juice of half a lemon. Salt. 1 or 2 cups of yogurt.
Mix everything together, marinate for a while (24 hours is the best!) or even half an hour will do.
Heat about 1cm deep oil in a non stick pan with lid. When very hot, add all the chicken to it. Pur about 1 or 2 cups of water into the marinade dish and swirl it around to grab all that yogurt mix, pour it all directly into the chicken pan.
Stir, arrange chicken in one layer, lid on, high heat for about 7 mins. Then turn chicken pieces over, lid on for about 5 mins.
Then take off lid, stir fry from time to time until most of the liquid evaporates and the oil separates. The chicken should now be coated with a thick sticky version of the marinade. You can serve like this, or add tomatoes, green chillies, onions, boiled potatoes etc to make a nice salan, or continue to fry further for a crispy finish.
This is a winner dish everytime and very simple n quick to make.

OK, I did NOT use any butter, just some heavy cream and the masalas. I have to pour out a cup of oil from it before serving ![]()

hahahha. Well, I used this butter chicken masala by Rasoi Magic. Fried some chicken in olive oil, then added the masala and water, some tomato puree and heavy cream. Man that thing gives off so much oil. I could cook for a wedding with the oil that is excess :D

Having said that, a very simple recipe, but looks mighty tasty.
