I am looking for ways to boil chicken breast but not have them harden. I have noticed that whenever I boil chicken breast and then add it to soups and yakhni it has a rubbery texture…
Pls share your tips for soft chicken breast.
P.S : I don’t use chicken breast to make yakhni or broth … I use leg, thigh pieces to make the broth… I just add chicken breast boiled separately to the broth… but it usually hardens…
Automne, since you add it separately to the broth, dont boil it next time , try frying it on low heat , in a covered pan. you will notice the difference. When you cover the pan, the moisture gets retained in the food and it becomes soft ... I am positive you will like the chicken taste better after frying it rather then boiling it .
yeah CB, most of the time when I grill chicken on the frying pan (less oil, covered pan) it does turn out soft but I didn't know if it would be ok to add grilled/fried chicken breast to broth....
automne, I always add grilled chicken to the broth ... But I time myself .. if I want to add it earlier on in the broth making process , then I dont grill it fully. I retain its hardness so it wont break into bits after cooking for an hour !
And usually I add it nearing the end of the broth cooking and the chicken comes out fine ...:@:
