I make mine like follows:
CHICKEN SALAN:
Fry up 2 medium chopped onions.When light brownish add the chicken,2 chopped tomatoes,and about 1 cup of yogurt along with a tablespoon each of chopped ginger and garlic.
Bhoonify the chicken well for a few mins.Then add the spices (salt/red chillies/zeera/dhaniya powder /haldi),plus a few chopped up dried plums(if you want to).Let the chicken cook on medium low heat till the water evaporates and the chicken is done.when cooked keep aside.
RICE:
Boil about 2 glasses of pre soaked rice in water to which you have already added salt,crushed ginger and garlic,zeera,green cardamom,black cardamom,a few cloves,staranise and a stick of cinnamon.
when the rice are more than half way done(not completely cooked) drain them.
Return half of them back to the pot.Layer with the chicken salan and some chopped up green chillies and fresh cilantro.Put the rest of the rice over the layer of the chicken.Add some olive oil and yellow food color on teh top layer and put on dum .I usually do a dum for 15-20 mins,but it can vary.
So thats how I make my biryani…![]()
