I make mine like follows:
CHICKEN SALAN:
Fry up 2 medium chopped onions.When light brownish add the chicken,2 chopped tomatoes,and about 1 cup of yogurt along with a tablespoon each of chopped ginger and garlic.
Bhoonify the chicken well for a few mins.Then add the spices (salt/red chillies/zeera/dhaniya powder /haldi),plus a few chopped up dried plums(if you want to).Let the chicken cook on medium low heat till the water evaporates and the chicken is done.when cooked keep aside.
RICE:
Boil about 2 glasses of pre soaked rice in water to which you have already added salt,crushed ginger and garlic,zeera,green cardamom,black cardamom,a few cloves,staranise and a stick of cinnamon.
when the rice are more than half way done(not completely cooked) drain them.
Return half of them back to the pot.Layer with the chicken salan and some chopped up green chillies and fresh cilantro.Put the rest of the rice over the layer of the chicken.Add some olive oil and yellow food color on teh top layer and put on dum .I usually do a dum for 15-20 mins,but it can vary.
So thats how I make my biryani…![]()

okey i want a recipe too............
but mostly the Chick biryanis i have tried are sooooooooooo dry...
there is this resturant and i love their biryaniiiiiiiiii and its not dry at all ...
i wana know how i can get this result.......
they use shimlah mirch too which gives a really nice smell.........

I recently tried my hand at this dish.. mixed response; if anyone notices any mistakes then please share;
Fry about four meduim sized onions.
After they have gone brown, i take out about 1/4 and leave aside to garnish.
to the remaining onions, I add the chicken and allow it to cook,
after 10 mins or so, being on meduim heat, i add the spices...garam masala (which contains all the spcies really, mine is home pounded), in additon, some starainse, 1 black cardmom pod, 1/2 tsp elachi poswder, a few whole elachi's, and the standard ginder/garlic/salt.
Allow it to simmer, and then add one whole tin of tomatoe.
Give it 5 mins or so and when i feel the chicken is almost done, i add the yoghurt and allow it to simmer for 5 mins.
RICE
would have been prepared;
i would have partially boiled the ricein salted water, with some garam masala in it.
Curry BAse - add some fresh corriander and mint, take of the heat.
Layer my over proof dish inalternatives of rice and curry till they mpty out, sprinkle the fired onions and seal the handi. Allow it 12 mins in the oven on medium heat.
Serve Warm,.

Sum1 told dat there is biryani drops I think to make biryani smell gud and it gives a gud taste into. Is dis true, wat is it call

I am not sure if its the same thing but I have seen a few people add a few drops of kewra water at the time of dum...
I personally do not like it....:)
