I just do as follows:

Pierce them with a knife or fork and roast them in the oven for about 25 minutes...then peel and enjoy...

Taste great on winter evenings!!!

dont really have to pierce them, if u dont they actually end up being a little more moist than if you do pierce them.

learnt the trick from my dad who has been roadting chestnuts from the 50's so thats kinda half a century of positive results speaking.
