Chef ahmadjee's Pakwan (Chicken Jalfereze for *Zaalim)

The ingredients are:

Murghi (Chicken)
Shimla mirich (Bell Pepper)
Piyaz (Onion)
Tamatar (Tomato)
Dahi (Yogurt)
Jalferezi Masala (Mix out of the box)

Cut the chicken into small (size is up to your own liking) boneless pieces. Put 'em in a bowl and add Jalfereze mix out of the box–I use half a box for every pound of Chicken. If your chicken was frozen, meaning it will add water to the mix then don’t put too much yogurt. Otherwise two table spoons will do for a pound of chicken. Mix it well and let it sit down for a little while. The recipe on the box calls for 15 minutes but from my experience, the more you let it marinate the tender the chicken will be & more tasty … I say at least an hour!

While the chicken is marinating cut yourself some veggies. Small blocks of Simla Mirach, though not too small that they dissolve. Try to find as as many colors of bell pepper as you can. I only had green so I went with that one. Similarly, onion should be sliced bigger than the normal size used for curry. Cut at least two big size tomatoes. We will use one to make the paste and will add one later for more color & taste. If you are lazy like me, get yourself those already cut lahsan and *adrak *to start with.

So, heat up the oil a little before putting in *lahsan *& adrak. Let 'em cook for a minute of two and then add one of the two chunked tomatoes. Cook the mix until you have a an even paste.

Add the chicken to the paste, and cook for say good 15 minutes or so or until the chicken is fried/done. Keep the heat at moderate, so that the meat gets cooked to the core & doesn’t get over done. You need to let the water evaporate before adding your veggies. You might want to add some regular chili peppers, black & red peppers & salt or you can always add 'em later with the veggies. I am bad about adding some vinegar while frying meat whenever I get a chance.

Add all the veggies, and cook for another 10-15 minutes!

I ate it today with boiled rice & raita but you can always eat it with bread. :slight_smile:

Guys it’s not hard to make up your own mix to marinate & these out of the box mixes are usually nothing but power. Mix zera, kali & lal mirchain, haldi, garam masala & a few of such spices in a blender and then add yogurt to the mix and marinate your chicken with that. It might not be Jalfereze but it sure will be spicy!!! ;-)

And yes, I made the above all by myself. Everyone is welcome to a bite & also cooking lessons. :-p
