Anyways! I have a HUGE GINORMOUSLY GIGANTIC problem. :frowning:

Everytime I make cheesecake the biscuit is too crumbly. I can’t add more butter because the taste of butter will become overpowering. And I also froze the damn cake :smack: But as it set to room temperature the base still crumbled. :hinna:

Should I use golden syrup? :smiley: :halo:

Watcha chefperts think? :bummer:

I pre-bake the crust (make it with crushed graham crackers, crushed almonds, a dash of cinnamon and butter) for 15 minutes. Let it cool then add the cream cheese mixture and bake the cake. Also, after baking the cake, I let it cool in the oven for an hour with the door open to prevent the top of the cheesecake from cracking.

Works for me.

Make sure you pat it down/squash the biscuit base together. Then refigerate it for a while so that it sets in place, rather than freezing it.

Use 7oz of graham cracker crumbs and one 1/4lb stick of butter, melted. Along with 1/3 cup sugar and a bit of nutmeg (cinnamon works, too). Full proof ratios, guaranteed -- I've made dozens of cheesecakes. (In the USA, graham crackers come in 14.4 oz boxes, with 3 separate waxed paper packs inside. Use one and a half packages. )

Press the crumb mixture into the springform pan using a straight-sided glass with a smooth bottom -- makes a nice corner. Put it in the fridge or freezer while you make the filling. No need to prebake it.

You’re not using enough base mixture or you’re spreading it too thinly in a large dish… you need to use more mixture and really squish it in… that will give you a rock solid base. :slight_smile:

u can use DIGESTIVE BISCUITS too as lots of coffeeshops usese them and i do personally like it same mixing it with some melted buter one table spoon of icing sugar and press all leave in the freezer for an hour thats it WALLAAAAA never got any problem.
