The way we make channa chat is simple enough. Boil the cholay. Add chopped/sliced onions, tomatoes, corriander leaves, green chillies, bioled potatoes diced, and chat masala. Im trying another one tomorrow. The one which Im gonna add tarmarind syrup and chat masala while the cholay are still on the stove; boiled but not fully drained. I have a feeling it should taste better. I might add a spoon or so of brown sugar too.

U can also add a drained, rinsed can of chickpeas to some fried onions in a pan, add some chopped tomato, garam masala, red chilli, pepper, salt, chat masala, lemon juice, green chillies and chopped fresh dhania. This is hot chatt patti cholay. My dad loves this dish.

Boil channay. Add thinly sliced red onion, tomatoes, diced potato. You can also add a can/boiled kidney beans. Add lemon juice, chilli powder, imli ka pani and salt.

This is how I make cholay :
Assuming you have the required quanitity of boiled cholas.
In a bartan , add a little water ( very little hardly 1/2 cup) with cholas and put of low flame. Add a tea spoon of NATIONAL CHANNA CHAT MASALA and mix , 1 tsp is never enuff so keep on adding more till you get the required taste and keep on mixing. Let it be on simmer for like 10 mins.
Cut boiled potatoes in cubes and slices of raw tomatoes. When you get the required taste in cholas add potatoes and tomatoes and mix well. Let be again on simmer for 10 mins.
I don't add any salt , lemon juice or imli water and yet the cholas turns out very yummy everytime. You can add more veges accordind to ur taste in it like onions , green onions , dhaniya etc.

water 2 cups
1 tea bag
1 bay leaf
garbanzo beans, boiled,drained 2 cups
oil 2 tbsps
onion, sliced 1
tomatoes, chopped 3
fresh cilantro leaves 2-3 tbsp
ground coriander 1 tsp
cumin seeds 1 tsp
grated fresh ginger 1 tsp
grated garlic 1 tsp
ground turmeric (optional) 1 tsp
onion, finely chopped 1
garam masala (optional) a pinch
In 2 cups of water, add tea bag, and bay leaf then bring it to boil. Reserving nearly half cup garbanzo beans, stir the
beans into the boiling water. When beans are heated through, discard the
tea bag and bay leaf. Remove from heat. Drain the beans,set aside.
Heat 2 tsps oil and
saute the sliced onion until tender. Remove from heat, cool, and mix
with the reserved garbanzo beans, 1 tomato, and 1/2 the cilantro
leaves. Set aside.
Heat the remaining oil then add coriander seeds (roasted n grounded) Place the, cumin seed (roasted n grounded), ginger, and garlic. Cook and stir
for 15 to 20 seconds, until slightly browned. Mix in the turmeric. Stir
the chopped onion and cook until tender. Mix
remaining tomatoes.Season with garam masala. Bring the tomato liquid to a boil, and cook almost 5 minutes. Stir in the boiled garbanzo beans, sliced onion
mixture, and adequate of the reserved water to attain a sticky,
gravy-like consistency. Continue to cook and stir 5 minutes. Garnish
with the remaining cilantro leaves to serve.

My other half hails from Karachi and he recently mentioned he loves the cholay you get as street food back home.
Are any of the recipes on this thread similar to the street food cholay you get in karachi?
From the description I got from him the cholay are not too dry and have liquid in them?
