Yes but grinding wheat has not become as commercial and glamorised as textile industry
The reason why the textile industry has excelled is because theres a lot of demand for the fabric on daily basis not just for apparel but also for furnishing etc.
In the olden days there wasn't that much of an awareness because there wasn't any medium or any kind of television/media for the people to get to know their thing thus the value of these things wasn't that much either.

Charkha is used for making thread and that thread is used to knit CharPai. As for as khais waving concerned i didnt see that, but may in some part of sub-continent people wave khais from thread made with Charkha.

Interesting. I didn't know that manji's baan is made using Charkha. I thought it might be made from jute (Pat-sin which is found in Bengla Desh)
