Hey Guys,
I got some whole wheat atta and im having some trouble making rotis out of it. maybe its because im using a frying pan…but the texture isnt the same as regular rots (ive had whole wheat chapatis before…so i know they work).
Any suggestions? ![]()

use a wok but upside down? the curvy surface might help somehow?

there iz nuthing better than a tava...chappatis cant be made perfect on any other thing than a tava...i personally make chappatis on a tava and main roti ki ek side ko saikh leti hu with the help of a piece of cloth and dusri side main tava hata k aag pe saikhti hu...by this u'll get phuli hui chapatis n very light one...and yeah if u live in karachi...these dayz chakki ata iz not at all gud...ive heard they mix sumthing with the ata thts y rotis arent turning out perfect...milavat u kno..

plusha i really like such kind of rotis and yeah they turn out really puffed...but here in saudia..we have to use gas cylinders and i am afraid of them simply so i use electric stove..and i can't get my rotis made like this:-/..i have to cook both of the sides on the tava else on stove it burns..

yeah i understand even my nani have this kinda electric stove n wenever i go to her place i suffer with the same prob...n rotis made like this are so stiff n thick...well cant do anything abt this but there iz nuthing to be afraid of cylinders unless n untill they r installed properly and if checked frequently...

I can't make proper roti's with wholewheat atta either - I use to just use white and had perfect rot's then MIL arrived and said better use medium or wholewheat atta - so we switched. Now sh'es gone to BIL's and my roti's aint turning out the same!
I haven't changed method or anything!

no change..simply knead and roll out and make roti on tawa..u can even make whole-wheat pooris as well...my sis too uses medium atta being there and she makes perfect pooris with that:)

With the white atta my rotis had smooth edges. The medium and wholeweat versions have "rustic" edges - they aren't as smooth

i never made my rotis with the medium and whole-wheat versions of england...but here in saudia i use chakki ka atta (whole-wheat) and they turn out nice...but my sis over there uses medium atta and she cooks phulkas and pooriyan with that..only this i know...
HinaS, try making sure that your frying pan is heated before you put the roti on it... I used to cook in frying pan also. Another thing if you have a gas cylinder you can puff up rotis on the stove instead of cooking the whole thing on the frying pan.
For the ones who have problems using whole wheat one thing I found helpful was adding a little bit of maida. I played around with it, the maida gives it a nice elastic easy to roll feeling.

what brand u r using whole wheat,
u should check ur mixing atta with water, and dough too, make aata before roti about 3 too 4 hours, thn it will work good frypan is not ur problem i used frypan for making roti, nonstick its work good for roti, if ur roti is little rugh than u should check ur heat, and maxing atta with water
don,t use too much dry atta during making roti, , in usa u can use durum floor goldon temple,

you will be perfect soon, but you sould learn to make good dough first than you will be able to make good roti, this is my experience, now i am making good roti, try to make round shape dough than role between ur palm and use finger to role ur dough trying to make roti, than use bailna for round shape,......i always use whole atta and mix with maida , and mix with warm water knee well, before making roti put in fridge,, i use frypan for roti its good, check heat and plz don,t use too much dry ata during makiing roti

are you still facing same problem with roti thn plz add 2 to 3 table spon oil during kneing atta with water , it will help you to make smooth dough and good roti
