p.s jaan leva.. before u pick on my cooking skills.. u ought to try my cooknig.. until then. Chup raho and keep istamaaling ur shaan masala :p
on a side note... apparently if u use shaan masala and eat seafood sometime during the same day, u can break out into a really bad allergic reaction.. so becareful

Well, I am not picking on your cooking. I am sure it tastes good in Aussie land.
If you don’t like shan, there is always national or aahmed masalas. ![]()

^ no.. its not about the packeted stuff
its about knowing the quanities of whats going in to make the thing taste good... anyone can use shaan to get the right taste... but u lose the fun of experimenting then

hmm..you want the recipe of chat masala to go into other ingredients?
In case it's just the regular chat, here's how I make it(and I've never made anything for more than 12 people so dunno how much you'd require for 40 ppl)
Boiled chick peas - 1 can
Boiled potatoes - 2 small
Fresh Coriander and Mint leaves - Handful
Fresh Tomato - 1 medium
Onion - 1 small
Lemon Juice - 1tbsp
Green Chillies (optional) 2-3
Chat Masala (I just use the ready made one)
Finely chop coriander, mint leaves, green chillies, onion and tomatoes. Cut boiled potatoes in small cubes. Add chat masala and lemon juice and mix everything well.
I normally serve it with sweet imli chutney and plain yougurt.
The above quantities should be enough for 3-4 people as a side dish.

^ That recipe sounds good, but quadruple it at LEAST (and add salt). I made chaat like that once and it went down so well it finished in the first few minutes. Luckily I had kept aside another bowl of it just in case.
Sprinkle some crunched up poppadums n chopped green coriander n red chilli powder on top as a garnish.
If u can't get hold of readymade chaat masala, I think the main ingredients are aamchur, red chilli, cumin, black pepper or something like that.

oh n if u dont have lemon juice u can go for orange juice. i personally like oj better and it tastes really good. i make it exactly like masi n i also put chaat masala (so no need for other masalas) just had it 2 days ago.

I love chat without the masala; just salt, lime juice, fresh mint, clintro, tomatoes, boiled potatoes, onions, and lots of plain yogurt.
