I had this amazing kalay (black) channay ka salan. It was ultimate comfort food!
It wasnt the traditional kalay channay ki chaat, but an actual brown salan (curry). I think it may be a Punjabi dish originally but I’m not sure. If anyone has a recipe please post it!
I saw my MIL make it a few times....
She fried a medium chopped onion....added tomatoes/ginger /garlic and all the spices to it and cooked the masala...when done added the pre-soaked chanay and some water and pressure cooked it....and that's pretty much it....

kaly chany takes more time so plz try to sock at night with baking soda next morning pressure cooked it for 20 minutes , add spices garlic ginger tomatoes, onions oil and cook

Salt,red chillies, zeera(cumin),haldi and sookha dhaniya powder....the usual spices that go into any desi salan...:)

I think I know what your referring to..my mum makes kaale chane which have like shorba and are dark brown but at times she makes chikar cholay (dont know why they call it that) and they are a lighter brown/orange colour with a lot of masala...and with lemon on them they taste absolutely delicious....!!
