Welcome to the forum ! I wonder if the only difference b/w cooking and baking is that baking is done inside the oven and cooking is done on stove. I cook bbq inside oven and it appears far more efficient than doing so on coals.

I prefer cooking to baking. However, I have a healthy respect for those that have a knack for baking. I can bake a good banana bread though.

The Simple Answer is that without Baking Soda the Cake will not be cake it would be flat but you have to use an acidic liquid like buttermilk or etc and baking powder is used for those baking items which don’t contain any Acidic Liquid. like Cookies. I wish you will be understood what I tried to Explained.
