Re: ChaanpeiN- Help plz
well my mom make this type of chops
first..marinade chops with spices and steam them
second...when they become cold beat an egg, dip them into the egg then deep fry.
delicious.
Re: ChaanpeiN- Help plz
^Thanks fazeelat but I am looking for the ones that you marinade and then cook in the oven or grill.
Re: ChaanpeiN- Help plz
Shinoo if you want desi style then try marinating with the usual spices and lemon juice or yogurt and just bake away.
Re: ChaanpeiN- Help plz
^Yeah I want the desi version. Problem is that mine turn out rather bland while I want them to be juicy and a bit spicey. Darr darr ke masalay daalti hooN cuz aggar zyaada dall jaayen then u have a problem. I'm basically looking for a good ratio of spices/lassan/adrak/yoghurt/lemon
If it was possible to taste while marinating then it wouldn't be a problem
Re: ChaanpeiN- Help plz
I know what you mean Shinoo! I just dip a finger in the masala and taste the tip of my finger because like most people i am not too keen on chakhing raw gosht but in some cases you gotta do it :( OR mariante the day before you are going to cook and then just bake one chop to see if the masala tastes right.
Sorry i am not much help but i just eyeball the ingredients, rarely ever measure.
Re: ChaanpeiN- Help plz
^hehehe beware you don't get a food poisening (I've had it once because of raw meat so am very cautious) Anyway normally I don't measure anything either while cooking regular salans etc. Sab andaaze se daalti hoon and alhamdulillah never messed up so far. But somehow with chaanpeiN and tikka etc I just don't know how much of everything, am too careful maybe :-/
Re: ChaanpeiN- Help plz
tikka and chanpain is the only thing I dun measure the ingredients, but for salans I have to measure the right ratio to make the right salan. I am plain weird!!!
I usually use shan masala, 1tbsp ginger-garlic paste, 1tbsp green paste(taht is green chilies, dhaniya and podina), and half cup yogurt...marinate it for 2-3 hours and then just bake it in the oven!! It turns out just fine. :-)
Re: ChaanpeiN- Help plz
Guys, I will try this recipe over the weekend (found it on the net)! Will post pictures of the end result insh'allah!
Ingredients
Serves 4
1 pint of live natural yogurt
1 Tablespoon Cumin powder
1 Tablespoon garam massala
1 Teaspoon Coriander powder
1 Teaspoon Turmeric powder
1 Teaspoon chilli powder
Juice 1 lemon
8 cloves garlic - crushed
1 inch grated ginger
Red food colouring
8 Lamb chops
1 Lemon
Method
Mix the spices, colouring, lemon juice, ginger and garlic up into a paste with a little water and stir in well with the yogurt to make a tandoori marinade. Remove the fat from the chops and marinate in the marinade for 2-60 hours. Preheat the oven to it's highest heat for at least 20 minutes. Shake off excess marinade and place chops on a wire rack in the oven. Cook for 20 minutes and check the chops are cooked by cutting into one slightly, serve with a wedge of lemon.
