i had this recently at a restaurant and had been craving it ever since so i looked up the recipe online. i made it and it turned out so so sooooo good. I tweaked it a bit …doubled the amount and added lots more green chillies.
i would advise you guys to grind the spring onions and the green chillies before frying them since the sauce had the onions and chillies floating to the top because just chopping it wasnt enough to make it “dissolve” into the sauce.
Ingredients for the marinade
- 1 head of Cauliflower (Gobhi) (broken into florets)
- A pinch of Ajinomoto Salt
- Cooking Oil (for deep frying)
ingredients for sauce
- 2 tbsp. Spring Onions (finely chopped)
- 1 tbsp. Garlic (Lehsan) (finely chopped)
- 1 tbsp. Ginger Root (Adrak) (finely chopped)
- 1 tbsp. Green Chillies (Hari Mirch) (finely chopped)
- ¼ tsp. White Pepper
- 1 tbsp. Corn Flour (mixed with ¼ cup of water)
- ¼ tsp. Sugar
- A pinch of Ajinomoto Salt
- Salt (to taste)
- 2 tbsp. Soy Sauce
- 1 cup Vegetable Stock (this i was just browsing thru a gourmet grocery store and found veggie broth cubes, like those chicken flavor cubes…my maa said that u could use regular veggie soup too …u know what maybe u can try using the regular chicken broth/cubes too…hmmm )
- 2 tbsp. Cooking Oil
ingredients for the batter
- ½ cup Refined Flour
- ¼ cup Corn Flour
- ¼ tsp. Chilli Powder* (i added more per taste)*
- Salt (to taste)
- Water (as needed)
Directions

Wash the cauliflower florets, sprinkle a little salt and ajinomoto and set aside for 5 minutes.

Combine together the: refined flour, corn flour, chilli powder, salt and water as needed. Beat well and prepare a thick coating batter out of it. *(like besan batter for pakoras)*taste to make sure salt is ok (yuck)

Heat the oil in a frying pan. Dip the cauliflorets one by one in the batter and deep fry. Drain when golden brown. Set aside. taste to make sure salt is ok (yum!)

Heat 2 tablespoons of oil in a pan (i added 4 tablespoons…no reason). Add the spring onions, ginger, garlic and green chillies. Fry for ½ minute. Add the stock, pepper, soy sauce, sugar, ajinomoto and salt. Simmer uncovered for 1 minute.* (you can add more veggie stock to adjust the taste)*

Add the cornflour mixed with water and stir continuously, so that the sauce becomes thick. (again u can add more/less cornflour based on how thick you want the sauce) Add the fried cauliflowerets just before serving. Garnish with spring onion tops.
