and it always confuss me. what kinds of phrases would you know that you can say “-e-” << like in that “format”. is it just a handful of given phrases that are known to be said like that?

well using " -e- " is farsi recipe of words… for example:
khuaab-e-khargosh = khargosh kay khuaab
Jurm-e-Zaeefi = Zaeefi (Old age) kaa jurm
so you get it… in regular terms the words are switched and conjunction of “kaa, kay, kee” of] is used…
