Does anyone have a easy foolproof recipe for carrot cake? Mine never comes out good

I use this recipe for carrot cake..,and it usually turns out well...
4 cups - Peeled and grated carrots
1 1/2 cups - Coarsely ground nuts
1 cup - raisins
2 cups - Flour
1 Tb - Cinnamon
1 tsp - Ground cloves
2 tsp - Baking soda
1 tsp - Salt
4 - Eggs
1 cup - Oil
1 cup - Granulated sugar
1 cup - brown sugar
1 Tb – vanilla essence
Mix the sugar and eggs together with the oil.
Add remaining ingredients and mix well.
Pour into prepared pan and bake.
Remove from oven and let cool.
Frost with cream cheese frosting
