Caribbean Rice and Tuna Steak

Caribbean Rice:
2 cans 16 oz. Black Eye Peas
2 cups rice
2 cups coconut milk
2 cups water
1/4 tsp thyme
2 sliced chili peppers
1 clove garlic, minced
3 scallions sliced
1 tsp salt
1/4 tsp black pepper

Mix all the ingredients in a big pot. Bring to boil, cover, and simmer for 20-30 minutes until the liquid is absorbed and the rice is tender.


Tuna Steak:
Make sure the tuna is thawed completely and then wash it. Sprinkle some salt and pepper on it and place it on a very lightly oiled pan. Fry on medium-high for about 90 seconds on each side. (I like my tuna very rare, with a little pinkish on the inside. Some people like it better fully cooked, but the more you cook it, the chewier/tougher it gets.)

I put half of the amount of all the ingredients because I was just trying it out for the first time. This was my first time making this and it turned out really well.

Mixed together in the pot

Cooked rice

Raw tuna steak (gross!)

If you fry it for too long and the outside is brownish, then you’ve cooked it too much. And good luck trying to chew that sucker. :smiley: hehe.
This should be about the shade you want the outside to be.
