1- I used to buy tomatoes in bulk (when they were on sale ) and chop and freeze (either fine chop or hand chop ) and use according to salan requirement. I used to put them in freezer bags and lay them flat.Easier to freeze and then store
2- I make coriander, mint chutney and add tatri (1/2 teaspoon) and keep in air tight bottle and use. Keeps for 2 months (use fresh dry spoon everytime to scoop some out). For green chillis I feel they lose their mirchipan after a few days. I buy green chilli, cut off their heads put them in a kitchen paper, put them in ziploc. and take out as needed and wash and use, it keeps for a month at least.
3- Yes you can make crispy. Put in airtight container (lined with kitchen paper) and refrigerate. Great for kachhey ghosht kee biryani
4- Best to marinate meats and freeze (If you are in N. America I don't like the taste of frozen meats, they taste odd, best to cook them when you want to eat them)
5 - MAke ginger garlic paste add oil and salt to it and it easily keeps for 1- 1.5 month. You can also freeze in ice cubes and use as you like
