If you don’t have an OCR software and you don’t have too much editing needed you can use a graphic editing softwae (e.g. Photoshop, Paint or GIM) you can just wipe out text and replace with new text into the graphic.

Didn’t your scanner come with any OCR software, usually its the lite version, but for minor projects they fit the bill.
