It is lal roti from Delhi , in Pakistan it is called taftaan.

There can't be a even remotely accurate count since the recipes vary so much from household to household. Some people use ghee, some vegetable oil, some butter, some more some less. In general Desi food tend to be very oily and so high in fat and cholesterol. If you can control the amount and kind of oil, Murgh cholay with boiled rice/plain roti is probably the healthiest choice from your list.

1 table spoon of cooking oil amounts to 120 calories, and dishes like nihari etc have multiple cups of oil! u can actually SEE the oil!! If you're training for something, or want those chiseled 6 packs to stay, lay off this food folks! Make sure its not the only cuisine you're into.
