thankyou! i have made little changes to the recipe, so far the balls look good, will find out in the morning, how they taste after being in the refrigerator all night. if they taste fine, then i will coat them in chocolate. i am wondering if it is okay to make them a week ahead of the event?

I think it would be okay to make the balls a week ahead but I wouldn't insert them into the stick a week ahead. Over time they might poke through! Unless maybe you lay them down...........

oh man what a day…initially had difficulty with chocolate but eventually figured out the issue. made first batch, after dinner decides to put them in the fridge, they slipped from hand, will be frosting them again tomorrow :frowning:

thank you! thankfully they were not completely ruined but only loose on the stick. I was so tired last night, leaving them in the fridge was the best decision. gluing them back in the morning was not too hard.

mirage...feeding bottles, hubby's lunch box, my water bottles, wafer box....in short my kitchen needs some deep cleaning right now. Once the baby is sleep, that is what i am going to do. :)

I have to do another batch this weekend for daughter’s bake sale at school.
Thankfully she only needs to bring in 15 of them.
Unfortunately that means that I will be eating the rest! :devil:

I used the Betty Crocker cake mix. I added a packet of instant pudding in the cake mix. So for chocolate cake, I used extra fudge chocolate cake, added a packet of chocolate instant pudding to the cake mix. For yello cake, i used extra moist yellow cake mix and instant vanilla pudding mix. Rest follow the directions on the cake mix to bake the cake. Make sure you don't over bake the cake. Mine were literally done in 35 mins.

When the cake has cooled down, divide the cake into 4 quarters. Take 1 quarter at a time and crumble it really well. Most of the online recipes tell you to add frosting as a binding agent. I did not use frosting as I did not want my balls to be too sweet. I used heavy whipping cream (No, you don't need to whip it). for 1 quarter, you almost need 1/8 cup of whipping cream. Add the cream to the crumble and make a dough. Your hands should come out clean, if you have cake on them, you might want to add little more crumbles to your mixture. Once you have made the dough, make small balls. Layer them on foil or parchment paper in a plate/tray.

Now you need pop sticks and chocolate.

I will strongly suggest to get the pop sticks and Wilton chocolate melts from Micheals. It will make your life extremely easy. For the instructions on the chocolate melt to melt the chocolate. I melted mine in the microwave. Add a tbsp of crisco vegetable shortening. Heat the chocolate melts for a minute, take it out and stir it with a spoon several times, if you feel it needs more melting, heat again for 20-30 seconds. Again, stir it to make sure it is smooth.

Dip the the pop stick in the chocolate and then in the ball. Once you have inserted the the sticks in the ball, leave them in the freezer for 35-40 mins. Do not leave them in the freezer too long. If you do, they will leak oil after frosting or might cause cracks in the frosting.

After 35 mins take them out, check your chocolate icing, make sure it is nice and soft. Dip the balls in the icing, use a spoon to cover ball, make sure it is nicely quoted with the icing, naked spots means it might leak some oil. Once, it is nicely coated with icing, give the pop a little spin to get rid of excess icing.

I also bought rectangles of foam/styrofoam from the Micheal's as a pop stand. If you want to decorate, you can do it you dip every ball. It is better to sprinkle the sprinkles on instead of rolling the ball in them.

I have read you can store them at room temperature or in the fridge. Mine are in the fridge. I made them a week earlier. So far they are sitting in the fridge all happy. We will take them out on Saturday. inshahAllah.

oh and you can almost get 12-14 pops from a quater of a cake. It is recommended to bake the cake in 13x9 pan.
