Hello guys. . I want to surprise my hubby by baking him a cake for our anniversary next week. .the problem is I have never iced a cake before.. can anyone share their most easy nd reliable recipe for chocolate frosting plzzzzzzz..t

Yep the most easiest is Ganache

Melt 150 grams of chocolate in microwave or on the stove over the pot of boiling water in heat proof bowl. When done boil 150ml of cream and when it boils stop the heat and add the melted chocolate in it. Mix it and leave it for 20-25 mins. You will get a very smooth icing and its too easy to handle.

chocolate ganache tastes the best too and is easiest to use as when it hardens it leaves a beautiful look

another tip is to substitute double cream with sour cream for a rich but sour taste… mmmmmmmm… chocolateeeee…

Ganache is super-easy - u don’t even need to melt the chocolate beforehand tho. Bring the heavy cream just up to a simmer and then pour it over the choc chips/chunks in a bowl. Make sure all the chocolate is submerged…let it sit for a minute…add a touch of softened butter and mix everything together. Chocolate melts perfectly this way and there’s no damage of burning or extra clean up. The butter adds a beautiful sheen…but is optional.

I tried both with melting chocolate and with the chunks but believe me the result of melted chocolate is much good so I happily do one extra pot clean up.

Honestly…i’ve tried both methods as well and find no difference. =/ I just find that simmering the cream and then pouring it over the chocolate is more fool-proof. No fear of burnt chocolate.

Hmm may be, But I did find a difference and therefore i do get chocolate melt. And my chocolate is never ever burnt. Putting it in double boiler is safe method for me. Therefore i like to make ganache in this way

Ok guyz I’ve decided to do ganache topping. . Does the ganache get stiff at room temperature? Is it s ok If I want to do some more decoration using whipped cream on top of the ganache?

Yes it will eventually retain its shape, but not in the stiff way that buttercream icing does. You can add decor on top of the ganache, but honestly, I think it’s more elegant when you let the ganache be the center of attention. You can top with almonds or chocolate instead of whipped cream.

yes it does get stiff on room temperature but more delicious and creamy when after putting on cake you refrigerate it. Whipped cream over ganache will make the cake quite heavy. You can put chocolate shavings as i had put in my attached pic. If you want to use whipped crem then just do a very little icing, otherwise ganache itself has a very nice look

The cake turned out awesome thanks guyz… I just sprinkled chocolate shavings on the ganache it looked lovely
