I thought it may be that.There was a recipe that Nigella used on TV once where she not only soaked the chicken in milk overnight,but she also boiled it.Apparently the chicken is lovely and tender this way,but the pan is a mess.Will try this way too.

buttermilk fried chickn, even chicken strips...yummmmy

you can even make a buttermilk ranch dressing :)
