Re: boneless handi or curry...advice & recepie please
if you want salan of any sort in any meat or chicken dish.. you will have to add some bones. otherwise its gonna taste really crap. the broth from cooking boned meat is what brings the taste to a salan. if you want.. add the neck or wing parts to a boneless chicken pot.. cook liek usual.. and then take out the boned pcs when serving.

I agree the tast is in the bones, it was annoying for me as I eat bonless meat. What I do is get the butcher to strip the meat from the bone but i always keep the bones, you can even buy bones from the butchers. I boil the bones in a big pan with lots of garlic and onions and reduce the mixture untill it's almost like jelly, then I strain the bones out and freeze the mixture in small amounts. Then when I make boneless meat dishes I just throw in the frozen stock and it always tastes perfect.

Well there are so many threads in this section, I don't think my idea would do it justice. You can use the kebabs as a starter, maybe make some somosas aswell (I usually spend about 8 hours every couple of months making about 300 somosas to freeze). Some kind of curry, rice and naan (I dont like roti and i freeze batches of naan mix aswell). For afters maybe buy a nice cake from the shop. When I am entertaining I a couple I usually do
Starter
Shami Kabab, meat somosas, chicken/fish pakora, spicy chicken wings
Main
Boneless meat/chicken curry, rice, naan
Afters
Cake/icecream/fruit
Re: boneless handi or curry...advice & recepie please
I prefer boneless meat salans...especially chicken. And I haven't had to add bones to create more flavor in the curry/gravy. Of course individual taste varies....but I don't think it's necessary. You can create a flavorful and richer gravy with a variety of spices and using certain ingredients. For example, using Greek yogurt as opposed to regular yogurt....cuz it has more tang. I find that using tomato paste as opposed to fresh tomatoes gives a different and more stronger flavor. Even the use of citrus or vinegar can make dishes "pop" in terms of taste.
I think there are certain dishes....like soup, for example.....that I feel have a richer taste with a meat-based broth. But I think that salans can be enhanced with the use of a variety of ingredients.
