Boiling Noodles

Whenever I boil noodles/spaghetti, i can never manage to get them the right softness. I dont know what im doing wrong. Following the instructions for the suggested boiling time always leaves them undone, so i boil them for a few extra minutes and they still dont turn out soft. They are edible, but they have that slight stiffness to them.

I was wondering if there is even a such thing as OVER boiling??..and making leaving them stiff bc of that. I usually boil them an extra 4-5 minutes, making them boil for about 15 minutes. Is that too much? Not long enough? Please help!

add oil ( 1 tbsp or 1 tsp) in water in which you are going to boil noodles . I have seen this on TV and I don't know what it really does but a couple of chefs recommend adding a pinch of haldi powder in the water.

and one more thing first bring the water to boil then put the noodles.

Great, thanks! So go ahead and add the oil before the water even boils?

I also add a pinch of salt. But the haldi sounds interesting, i just hope it doesnt leave it's taste in the noodles. I dont think that would be appealing lol.

yes I add the oil before the boil comes.

and just a pinch of turmeric not even a quarter tea spoon only a pinch.

adding oil to the water doesn't let the noodles absorb the sauce. You should always add salt to the noodles when boiling because that is the only way they will get the saltiness. I think I boil my noodles somewhere from 10-15minutes in a spacious pot with plenty of water.

yup like Lusi said ... and also if you want noodles to have some tiny spicey touch ... add a few thickly cut onions and a full clove of garlic in the boiling water ... after you drain the noodles , take the onion pieces and garlic clove out ....

It just adds an additional kick to the noodles ..

I think you arent cooking them enough ... also if you boil noodles on high heat , they wont come out soft .. so boil the water to maximum , add noodles and after about two -three minutes reduce the heat to medium low, cover the pot and let them cook for 5-8 minutes .. covering the pot makes them soft and well cooked ... low heat helps them cook from within ...
