Okay so uhmmm i boiled a package of frozen spinach for my omelette but i have plenty left over..hubby doesn’t eat it and I don’t eat too much of it at once…what are some ideas for it, that i can finish in the next 2 days :S
mix it up with some feta (or a cheese you like), onion ..... put it in a frozen pastry dough and bake it!

Put spinach in a blender to puree it, then transfer to a pot & add 1-2 tsp vinegar, 3-4 cups stock/water,
1 chicken bullion cube (optional), garlic & ginger (a must), salt, lemon pepper spice, red pepper flakes and some basil/oregano herb. Add corn/carrots or any chopped vegetable you have on hand and cook for 10-15 minutes or until ready as per taste.
( I normally make broccoli, spinach, and corn soup)

In a saute some onions, add ginger garlic paste, saute for few more mins. Add salt, haldi, garam masala, chopped tomatoes or tomato puree. Bhonafy it for couple mins. Add boneless chicken bhonafy it for couple more mins. Add spinach. Cook on medium low heat until chicken is tender. Spinach and chicken might leave water, it really depends what consistency you want your salan to be. I try not to bhonafy it too much but if you want you can. I haven't really added any chillies if you want you can add green chillies or red pepper.
Boil and drain it, squeeze-out the water and add it to cream cheese. Add salt and pepper and fill large pasta shells with it..layer tomato sauce on the bottom, pasta and then white sauce/bechamel and bake! Top with cheese and bake a little again..
I have read somewhere that frozen spinac actaully strips iron off your body, so since then doesn't matter how hard it is I always go for fresh spinach.
