Okay so yesterday I made biryani and it came out okay (well the rice cooked perfectly and the meat wasn’t undercooked) BUT it ended up tasting pretty bland…I used an entire packet of National’s biryani masala and only half the yogurt recommended and i didn’t add any extra water…nromally I have to use only half a packet of something otherwise it ends up too spicy for me…so i donno why this was so pheeka…
anyways any tips on how to fix it? I was thinking of frying some onions wiht masalas but Im afraid it might make it too greasy…
Sara, you can fix it by bhooning some onions, tomatoes and garlic ginger. Add some more biryani masala. Once it's all bhunoed, do layers of the biryani and this new masala and dum it for a few minutes.
Next time when you are boiling rice add some whole garam masala and salt to the water so the rice have some flavor too even if they are not completely covered with masala.
Also I think you should have enough gravy and not adding extra water may have prevented that. The packet instructions normally tell you to add water so you have almost 2 cups of gravy.. so yea maybe that's why.
As for now, just make a spicy raita to go with it.

Just a question Sara...you used the entire packet of masala? How much meat did you have/how many cups of rice did you cook? It doesn't seem to be that the biryani would turn out bland. Is the Natainal masala packet the same size as Shan's?

That requires a bit of hit and try until you get to learn how much the rice should be boiled before layering it with masala. Anyway try the other thing I mentioned.
Also could be what smilestar mentioned, maybe more rice in comparison to meat/masala.
