Re: Biryani

My chicken biryani recipe. I must warn you that it's very spicey!

Part 1
-2.25lb or whole chicken
-2 tbs garam masala
-2tbs red chili powder
-3 tbs coriander powder
-5 cloves
-8-10 black peppercorns
-1.5tsp cumin seeds
-1/2 cup yogurt
-1 fresh lemon squeezed
-2tbs ginger/garlic paste
-2.5 tsp or to taste salt
-3 tomatoes roughly chopped
-3 onions sliced and fried
-6 green chillies slit
-1/2 bunch chopped mint
-4 tbs Oil

Part 2
For rice
-3 mugs full of rice
-whole spices(black cumin, green cardamoms, javetri,1 black cardamom, 1 cinnamon stick)
-salt

Part 3
-Lemon juice
-few drops Kewra
-2 tbs oil
-a pinch orange color(optional)

Method:

-Marinate ALL the above ingredients in part 1 including tomatoes, onions and green chillies.
-Soak rice in water.
-Heat a skillet and cook the chicken for 10-15 mins. At the same time boil water for rice and cook the rice until it's 3/4 done.
-Now layer chicken either in an aluminum dish or a wide neck pot and layer the rice on top of it. Add part 3 ingredients lemon juice, kewra, oil and sprinkle some color.
-Put biryani for 'dam'(if in the oven then at 350F for 40 minutes, otherwise at low-medium heat on stove for 40 minutes). When done, mix biryani before serving!
