daffy, I’m a lil confused by your question, so you want to know the different ways of making the biryani masala, right? because you want to stick to the method of layering the rice and meat and putting it on dam?

Normally, I fry onions and garlic, add masala, add chicken, bhoon it…boil the rice with bay leaves and cardamoms and salt (I always discard those in the end before serving) and then do the layers and damm.

Another way, you can marinate the meat with masala and yogurt and cook it just like that.
Or you can add tomatoes or just yogurt… depends really!
There’s really several ways to make it, you have to play around wiht it. I’ve been cooking for 4 years and every single time I made biryani it was trial and error…never knew if it owuld come out right or not. only very recently figured out the best way to make biryani the way my husband and I like it.

and contrary to what some will have you think…using packet masala isn’t the worst thing in the world, esp if you’re a beginner. You still have to cook/prepare the food, you still have to know the ratio of masalas and how much to add (for some, a pinch of shan masala woudl be enough, while for others, an entire packet is pheeka)…although I’ve finally found the best way to make biryani (for myself), I still rely on shan masala for the flavor…now figuring out those spices and their ratios is another project of its own
